3 pcs chicken drumsticks or any chicken part of your choice
2 tbsp fish sauce
ΒΌ cup garlic minced
3 pcs calamansi juiced
Egg white from 1 egg
Salt & pepper to taste
All-purpose flour for coating
Cooking oil for deep-frying
FOR THE GRAVY:
2 tbsp butter
1 tsp garlic minced
2 tbsp all-purpose flour
1 cup chicken stock
Salt & pepper to taste
Process:
In a mixing bowl, combine all ingredients except for the flour and oil. Marinate the chicken for 1 to 3 hours.
Coat the marinated chicken with flour evenly.
Heat cooking oil in a pan. Deep-fry the chicken until golden brown. Remove from heat then drain excess oil using wire rack or tissue paper.
FOR THE GRAVY:
Heat butter in a pan. Add all ingredients and mix well so that no lumps form. Cook until the gravy is thick enough. (If the gravy is too thick adjust it by adding a little amount of water).
